After porting my IM, I found that my knock sensor(being plastic) had broken
Now I'm running with my CEL on 24/7. The car runs great but I know this is a problem. Is there any resistors or dummy sensors out there for cheap that I can suppliment in for the KS?

I had that same problem. I drove it for a while with the CEL on but then I found out that if you go to radioshack you can buy a piezo buzzer (It was a 3-20V I think). splice into the wire going to the KS with the red one and just ground the black one and tadda no more CEL.

I have read on ht that you can ground out the knock sensor cable

Honda wouldn't spend the money for the extra shielded KS if it wasn't needed, its retarding your timing to protect the motor from detonation. Don't bypass it, replace it.
