Only reason I have a Fuel pressure regulator for is because, I bought the hatch shell and it had a 255lph fuel pump in it, and with the stock FPR it floods the motor.
Also, I can floor my gas pedal, and it feels like my car is going nowhere What could it be.

stock by the FPR is 38-42 psi.... set it at 32 and u should b fine.. ohnestly the rich condition u r getting means u have it set to high... the fuel pump will make it run a little richer but also the Fuel pump is just to send fuel into the injectors to make sure u dont get lean conditions.. the injectors in conjunction tell u wether or not to dump more fuel... so just go a little lower on the fuel pressure and u will b fine, it probably is just a little to much for the injectors and causing a rich condition...
