My spatchcock that is. Cooked the bird on the smoker, turned out real good. Cut out the spine and lay her out flat.

Some seasoning, SPG, lemon pepper, some olive oil. After cooking a bit slather on some BBQ sauce.




A nice BD meal for the lady.

You save that back bone for broth?

I cook my ducks that way. Cut the back out, cut some slits it the skin, salt them up, and let them rest in the fridge for a few days. Then roast them, cooler temp to start finish hot.
Duck skin is better than bacon, and the grease is tasty to cut other things with.
