Does the coolant in the reservoir bottle smell of fumes?
Is the oil clean?

Bad coolant temperature sensor check wires and the plug. Im pretty sure it sends the signal to turn on the fan. It’s still going to over heat with no thermostat. It’s not Going to hold the coolant back in the radiator to cool the coolant. Hope this helps good luck.

Put the thermostat BACK in, even if it is just gutted. You need some restriction.

You took the thermostat out, might as well put in a new one and then move on to troubleshoot the other components for proper flow and fan cooling like the others suggested.
