I work at east side marios (kinda like the olive garden, pretty much the same restaurant) and i hate our alfredo sauce, so i made my own recipe. enjoy

what you'll need
-1 clove of garlic
-1 tsp ground thyme
-2 tbsp butter
-1 chicken breast
-2 large onions
-1 large head of broccoli
-1 cups shredded mozzarella
-2 tbsp parmigiana cheese
-1/2L of 35% cream
-2 tsp salt
-3 tsp pepper
-your favorite pasta

what you need to do
-heat medium size pot at medium heat, add butter
-dice onions to roughly the size of a penny and once butter is melted add to pan with garlic
-saute until golden brown in color
-cut broccoli into bite size pieces and place to one side
-cut chicken into 1/2" cubes
-add chicken to pot and cook until slightly brown
-add cream, salt, pepper, parmigiana cheese and thyme
-bring to simmer (very small amount of bubbles)
-add broccoli and mozzarella cheese
-simmer until broccoli is cooked
-put over your favorite pasta dish
-if the sauce is not thick enough for your taste, add 1/2 extra mozzarella cheese and cook until melted

this will make enough to fill me up but i eat a lot. if you don't eat it all you have leftovers for later.

nice work. i wanna give some pointers.

if you want to take the sauce to the next level.

Melt butter in a medium saucepan over medium low heat and and 1 minced garlic. don't let turn brown cause it'll turn bitter just golden. Add cream, a splash of white wine, and simmer for 5 minutes, add cheese and whisk quickly, heating through. srinkle in white pepper so you can keep the sauce white, Stir in parsley and serve. i don't add salt cause the cheese is already salty.

lol forgot about garlic, it actually is part of my recipe. i like salty food, i smoke. i'll have to try the white wine and parsley. white pepper is expensive shit like 7 bucks for a small bottle here in Canada.

and i forgot that i ground thyme and add it.
