First Startup, First Build, first tune

Hi all,

in the next month or so it will be time for the first start up on my a6/z6 mini me-

spec will be

z6 head
stainless valves
crespo springs
crower retainers
crower stg 3
p29's 76mm bore
port polish
ported manifold
full exhaust system
CAI
fidanza flywheel

My question is, how can i do the first run safely,
the majority of start up guides reccomend holding engine at 2k ish revs to seat the rings, but how can i safely sit at 2k on the first start up?

surely i need to tune the afr's first to prevent any risk of over/under fueling?

will be running crome with ostrich+lm-1
has anybody come into a similar situation?
